BROWNIE-LIKE
Ingredients
2 eggs
1 tea glass carob extract
1/2 tea glass of milk
2/3 cup cocoa
1.5 cups whole wheat flour
1 teaspoon baking powder
1 tea glass raw hazelnuts / almonds / walnuts
50 g dark chocolate with at least 70-80% cocoa content (optional)
For the top:
The chopped nuts and chocolate pieces you set aside
Set the oven to 180 degree celcius and line your tray with baking paper and set aside. If you are using hazelnuts, lightly roast them in a pan. Beat the eggs with the carob extract until nice and frothy. Set the mixer aside. Add the milk, cocoa and mix well with a spoon. Add the flour, baking powder, half of the hazelnuts/walnuts and half of the chopped dark chocolate. When the mixture becomes homogeneous, pour it into the baking dish, don't be afraid that the consistency will be thick. Sprinkle the reserved hazelnuts/walnuts and dark chocolate on top. Bake for only 12 minutes and leave to cool. If you bake it longer, it will be like a cocoa cake, not a wet brownie. The next day, I think it will become an indispensable part of your diet, because it is also very good when it cools down. If you haven't tried it yet, especially with a good cup of coffee, you are missing out.
